Black rice is similar to brown rice and is rich in fibre and protein. The dark colour means that it is packed full of vitamins and nutrients including anthocyanins. Anthocyanins are present in rich coloured foods such as black rice, raspberries, blueberries and purple broccoli. The natural black colour looks greatly mixed in with brown or white rice and served as an accompaniment to curry dishes. Black rice usually turns purple during cooking and has a similar taste and nutty texture to brown rice. It can be used for both sweet and savoury dishes including porridge, desserts and the traditional Chinese black rice cake. Boil 1 cup of black rice with 2 cups of water for 30-35 minutes, or until tender. Drain excess water and serve.
